Evel Pie
Sin City, Nevada truly has it all: the “Downtown Las Vegas” sign, the 6th tallest, and arguably most impressive, pyramid in the world , seafood city, and Evel Pie. Evel pie is a bar and slice shop located in the heart of Old Las Vegas. But it’s not just a place to get pizza and a drink, adorned with authentic memorabilia of the late (rest in peace) legendary stuntman, Evel Pie is truly one of the finest cultural institutions of the city. It’s digital presence is equally bold thanks to a website that is as loud as Fremont street. All of this left us with high hopes that this magnificent homage to Evel Knievel would only be further accentuated by their “Maui Wowie” pizza. With sweet and fresh pineapple chunks, flavorful ham slices, jalapenos that added to the flavor rather than dominating it, a tasty red sauce, and pleasant mozzarella cheese all atop of a very thin and crispy crust - this pizza had everything right. While none of the toppings or even flavors for that matter were anything extraordinary, the execution was a thing of beauty. The distribution of the toppings reflects a caliber of discipline on behalf of the chef that is rarely seen in the Hawaiian pizza world. The density of toppings was perfect and it allowed for each ingredient to contribute to the overall, well balanced flavor of the pizza. There was no abundance of any one topping, mitigating the risk of excessive ham stackage, cheese overload, and massive jalapeno flavor entirely. This was all further enhanced by the incredible relative positioning of the individual toppings. The tasteful overlap of pineapple and ham, ham and jalapeno, and jalapeno and ham (to name a few examples), made little clusters of tastiness that highlighted the pizza’s full range of flavors. The same level of precision and attention to detail that allowed Evel Knievel to clear a jump over 14 greyhound buses is taken by the chefs at Evel Pie to make a pizza that really stands out. The only fault was that the slices got a little dry near the end, which is likely attributable to the fact that these were reheated slices. This, however can be excused and we applaud Evel Pie for treating the “Maui Wowie” as one of their staple pizzas that they always have at the ready. If Evel Knievel was alive, I’d like to think that he’d be very proud of this Hawaiian pizza and that he’d incorporate it into all of his stunts.
