Context

• Basel!
• Very artsy pizza matches the cities energy
• Complex, a little wonky, difficult to decipher

Crust

• Light, thin, a touch crispy but soft on the inside
• Good charred flavor

Sauce

• Bright tomatoes, very good

Mozzarella

• “Fior di Latte”
• A little creamy, not a strong “cheese” taste
• Amazing texture

Tiroler Speck

• At it’s best tasted like walkers bacon chips, light and flavorful
• Most of the time extremely meaty, almost gamey
• “Tasted like biting into an Animal”
• While regional, perhaps a bit too strong of a flavor. Very overwhelming
• Kind of like a cured meat

Marinated Pineapple

• Hard to tell what they did to it
• Not really enhancing it, but making it more complex
• Diminished the sweetness
• Not bad but sweetness wasn’t compensated for
• Sometimes tomato sauce tasted sweeter and that’s not due to an unusually sweet tomato sauce

Miscellaneous Toppings

• The scallions, while plentiful, didn’t overwhelm
• Nonetheless one of the strongest flavors, behind the speck of course
• Pink Peppercorns - floral, fruity, no spice, more complexity very interesting

Additional Thoughts

• Left us with more questions than answers
